A method for improving meat quality of livestock is provided to subcutaneously implant a composition for improving the meat quality of the livestock in order to increase the amount of intramuscular fat accumulated in the muscular tissue. A method for improving meat quality of livestock comprises the following steps of: preparing a composition for improving the quality of meat containing soybean isoflavone genistein as an active ingredient; pelleting the composition with together glucose and additives; and subcutaneously implanting it to the livestock. A vegetable oil is preferred as the additive. The vegetable oil is selected from the group consisting of corn oil, rice oil and soybean oil. The composition for improving the quality of meat includes glucose.
