PURPOSE: A beef-specific marker containing p21 protein for determining age is provided to highly express p21 protein in muscle tissue of beef less than 30 months old. CONSTITUTION: A method for determining beef age is performed by antibody-antigen binding reaction. The antigen-antibody binding reaction is performed by one or more kinds of methods selected from the group consisting of ELISA, radioimmunoassay(RIA), sandwich assay, RT-PCR, real-time PCR, western blot, immunoprecipitation, immunohistochemical staining, tandem mass spectrometry(LC-MS/MS), and antigen-antibody coagulation.
