FIELD: food industry.;SUBSTANCE: bioproduct sample with a specified moisture content is placed inside the working chamber represented by a thermostated cylinder. Impact on the sample is performed by temperature through the cylinder walls and two pistons. The upper and the lower pistons move in the axial and circumferential directions accordingly. One measures effort on the upper piston and the latter movement, moment on the lower cylinder and the latter angular rotation speed as well as the cylinder temperature and records the current time. After expiry of the specified time interval the impact is discontinued. By the measured parametres one calculates pressure and effective shear rate. Relying on the sample produced, one defines its food value specified to be the amount of free glucose and amino nitrogen. Impact parametres setting and food value definition are repeated at other pressure values within the following ranges: pressure - 0÷10 MPa, temperature - 25÷200°C, humidity - 6-35%, shear rate - 10-1÷10+4 sec-1, impact time - 0.01÷1 h. For implementation of the method the device strength elements are designed as two pistons arranged inside the cylinder on two opposite sides of the working chamber. The lower piston is equipped with an adjustable electric drive for its rotation round the longitudinal axis while the upper piston is equipped with an adjustable electric drive for its movement along the longitudinal axis so that to enable generation of adjustable pressure inside the working chamber within the 0÷10 MPa range. The upper and the lower pistons are equipped with replaceable disks rigidly connected with them and mounted on the side of the working chamber. The cylinder is equipped with an electric heater mounted inside the cylinder cavity around the working chamber so that to enable temperature adjustment within the 25÷200°C range. The device contains the upper piston force and movement sensor, the lower piston moment of force and angular rotation speed sensors and the cylinder temperature sensor. The device contains a computer and an analogue-to-digital/digital-to-analogue signal converter. Via the signal converter the computer is connected to the electric heater, to the adjustable drives of the upper and the lower pistons and the sensors.;EFFECT: invention allows to establish a connection between integrated physico-mechanical impact on the bioproduct and the latter food value, to extend the range of impact parametres, to improve the method accuracy and expand functionalities.;4 cl, 10 dwg, 2 tbl, 1 ex
