A L-biphenyl alanine compound (2') is prepared by hydrolyzing biphenyl alanine ester compound (1) with protease derived from microorganism belonging to Bacillusin mixed solvent of organic solvent and water at pH of 6-13. An aqueous layer containing L-biphenyl alanine compound is separated from an organic layer containing unreacted D-biphenyl alanine ester compound (3). Then, L-biphenyl alanine compound is extracted from the aqueous layer by adding inorganic salt and organic solvent to the aqueous layer, to recover L-biphenyl alanine compound. A L-biphenyl alanine compound of formula (2') is prepared by hydrolyzing biphenyl alanine ester compound of formula (1) with protease derived from microorganism belonging to Bacillusin mixed solvent of organic solvent and water at pH of 6-13. An aqueous layer containing L-biphenyl alanine compound is separated from an organic layer containing unreacted D-biphenyl alanine ester compound of formula (3). Then, L-biphenyl alanine compound is extracted from the aqueous layer by adding inorganic salt and organic solvent to the aqueous layer, to recover L-biphenyl alanine compound. R 1aralkyl, aryl, alkyl, haloalkyl, alkenyl, cycloalkyl, or substituent; R 2protective group of amino group;and M : alkali metal atom or alkaline-earth metal atom.
