The oven (2) has a control device controllably operating two top heat radiators and an air circulation fan (5) in a fan grilling operating mode with a constant power and speed in a continuous manner. The top heat radiators are installed at an upper ceiling wall. One of the top heat radiators is formed as an inner circuit and the other top heat radiator is formed as an outer and larger circuit. A temperature sensor detects temperature in a cooking chamber (16). The control device controls the top heat radiators by a phase control process and/or a voltage divider. An independent claim is also included for a method for operating a backing oven.
