The device for product refinement of baked products such as plunder or fine pastries with different fluids, fat-containing mass and/or glaze as finishing mass, comprises a first upstream finishing station such as apricot station, where the finishing mass is applied or bringable in a coating device on the product, a cooling- and/or drying system such as recirculation air- and cooling station, cooling zone and/or cooled station. The cooling- and/or drying system is arranged in order to partially cool and/or to dry the product coated and subjected with the first finishing mass. The device for product refinement of baked products such as plunder or fine pastries with different fluids, fat-containing mass and/or glaze as finishing mass, comprises a first upstream finishing station such as apricot station, where the finishing mass is applied or bringable in a coating device on the product, a cooling- and/or drying system such as recirculation air- and cooling station, cooling zone and/or cooled station. The cooling- and/or drying system is arranged in order to partially cool and/or to dry the product coated and subjected with the first finishing mass, a conveyor device as drive unit for transporting the product through the cooling- and/or drying system, and/or a second or further finishing station such as fondant station for partially applying and/or spraying and/or coating the second and/or further finishing mass in a coating device on and/or under the product. An independent claim is included for a method for product refinement of baked products such as plunder or fine pastries with different fluids, fat-containing mass and/or glaze as finishing mass.
