PROBLEM TO BE SOLVED: To provide a mutant yeast strain producible of a large amount of tyrosol and to develop a fermented alcoholic beverage meeting diversification of taste.SOLUTION: There are provided: the mutant yeast strain having high tyrosol productivity and comprising tryptophan-requiring ethanol-resistant Saccharomyces cerevisiae mutant strain trp3E5 (NITE AP-978); a method for producing the fermented alcoholic beverage including a fermentation step with the mutant strain; and the alcoholic beverage and refined Sake produced by using the mutant strain.
