PURPOSE: A processing method of green tea leaves for eating is provided to offer functional components of the green tea leaves to users by serving the processed green tea leaves with bibimbap(rice mixed with vegetables and beef). CONSTITUTION: A processing method(100) of green tea leaves for eating comprises the following: growing the green tea leaves for 15-20 days in the shade before harvesting; heating the harvested green tea leaves at 250-300 deg C for 3-4 minutes, and rapidly cooling; firstly drying the cooled green tea leaves at 190-200 deg C for 4-5 minutes; and secondly drying the green tea leaves at 80-90 deg C for 30-40 minutes.
