Disclosed is a method for producing a vegetable by hydroponic culture whereby the content of a useful component, for example, a nutrient component or a taste component, such as ascorbic acid, polyphenol or saccharide, can be increased without requiring any additional equipment including a special light source such as a UV lamp. This method for producing a vegetable in hydroponic culture is characterized in that the vegetable is grown in the state, where at least a part of the roots thereof are exposed to the air, over a definite period of time before harvesting.
