PURPOSE: A method for making wine using Saccharomyces cerevisiae is provided to enhance alcohol resistance and alcohol fermentation ability and to make soft wine with high sweetness and alcohol content.;CONSTITUTION: A novel strain, Saccharomyces cerevisiae NK28(deposit number KACC 93117P) has sugar tolerance, alcohol resistance, or alcohol productivity. The strain is isolated from the skin of a kiwi. Maltose is used as a carbon source. A method for making wine comprises a step of fermenting grapes with grain starch.
