PURPOSE: An instant vegetable salad composition and a producing method thereof are provided to secure the excellent functionality and the storage property of the composition, and to enable a user to simply eat salad. CONSTITUTION: A producing method of an instant vegetable salad composition comprises the following steps: mixing 50~70wt% of main vegetable ingredients, 20~40wt% of low-fat mayonnaise sauce, 5~15wt% of auxiliary vegetable ingredients, 5~10wt% of salad base, and the balance of purified water; inserting the mixture into a container and packing; firstly sterilizing the packed product at 95~105deg C for 20~30minutes; and secondly sterilizing the product at 85~95deg C for 30~40minutes.
