PURPOSE: An extraction method of jujube leaves, jujube leaf extract produced therefrom, and food composition including thereof are provided to effectively obtain antioxidants from the jujube leaves. CONSTITUTION: An extraction method of jujube leaves comprises a step of extracting the jujube leaves at 35-50 deg C for 10-40 minutes using 20-60% ethanol. The jujube leaf extract obtained from the extraction method contains 170-180mg/g of polyphenol, and 30-50mg/g of flavonoid. The jujube leaf extract has the electron-donating ability of 80-90%.
