Tempering treatment of liquid chocolate mass to at least partial pre-crystallization by a cooling surface and a scraper, comprises (i) introducing the liquid chocolate mass into a cylinder tube cooled from outside, (ii) stripping by means of a piston (2), which is movable to and fro or up and down and provided with a through opening (3), through a cylinder (1), from an inner surface of the cylinder, and (iii) recycling the remaining liquid chocolate mass during movement of the piston. An independent claim is also included for a device for tempering treatment of the liquid chocolate mass for at least partially pre-crystallization by the cooling surface and the scraper, where the cooling surface is the inner surface of the cylinder tube, in which the piston provided with through openings, is movable up and down or to and fro in the chocolate mass so that a fixed part of the chocolate mass adhering to the inner surface of the cylinder, is transferred into the liquid chocolate mass and shearing of the chocolate mass is carried out over the over-topping of the piston, through piston openings, during the movement of the piston.
