PROBLEM TO BE SOLVED: To provide a novel Surimi product having a fluffy-melty mouth feeling.SOLUTION: The fluffy-melty fish Surimi (minced fish) product is manufactured through the following steps : tofu is mixed in a fish paste and alpha-modified starch is added to prepare a base foodstuff ; soymilk and vegetable oil are added to the base foodstuff ; the modified starch is added again, and then the foodstuff is steamed and freezed and/or deep-fried in batter.
