PROBLEM TO BE SOLVED: To provide an analysis method for simply and quickly analyzing a physical characteristic of a soybean protein.;SOLUTION: In a step of forming a dough containing the soybean protein by using a food processor type mixer, the physical characteristic is calculated from peak height data of torque, or time data until the torque peak, from the mixed recording data obtained from the process of forming the dough, thereby the physical characteristic of a soybean protein is analyzed simply and quickly.;COPYRIGHT: (C)2013,JPO&INPIT
