The present Invention relates to the treatment of milk and dairy products such as Milk residues with an improved System of lactoperoxidase. The improved System of lactoperoxidase is activated by the addition of a source of hydrogen peroxide and an oxidizable Agent, such as a Halide to Milk to inactivate bacterial Pathogens.The improved System of lactoperoxidase can be used alone or along with pasteurization to reduce or eliminate the bacterial Load in dairy products.
