The present invention refers to a functional ingredient for being used in the formulation of food, pharmaceutical and/or the like products, which contains antioxidants microencapsulated by spry-drying. The microencapsulated antioxidants result from strawberry (Fregaria vesca L), grape (Vitis vinifera), blackberry (Rubus fructicosus L.), cranberry ((Vaccinium oxycoccus), and blueberry (Vaccinium myrtillusy). The powder, resulting from the microencapsulation of the fruit juices and/or extracts, is used in the manufacture of any type of food, pharmaceutical and/or the like product, which is useful for any individual since it provides the organism with the daily intake of antioxidants recommended by different organisms for regulating human nutrition such as the US agricultural authority which rates the daily antioxidant intake in 1 g per day or 5000 ORAC, this controlling diabetes mellitus type II, blood pressure and also being an adjuvant in the CUC cancer treatment. The microcapsules wi th antioxidants obtained by the spray-drying technology have an average size of 10 Ám, this size providing a higher structural stability to the microcapsule, and also resisting temperatures of from about 150°C to about 250°C required in the manufacture of a wide range of food, pharmaceutical and/or the like products.
