The method of monitoring the formation of delamination in drilling processes of composites, comprising capture, during drilling of each hole, acoustic emission signals using at least one sensor that converts sound signals captured emission voltage; defined based on the voltage signals captured a study area (ZE) corresponding to a transition area between a third and a fourth zone (III, IV) cutting; determining a relative minimum value (u) and outputting a first signal warning of possible delamination when the relative minimum value (N) is greater than a minimum value relative reference (N {sub, Ref}); issue a warning signal when a possible delamination normalized peak height of (H {sub, 2}) is greater than an altitude reference normalized peak (H {2Ref}); and issuing an acceptance signal when the normalized peak height (H {sub, 2}) is lower than the altitude reference normalized peak (H {sub, 2Ref}).
