The present invention relates to a persimmon leaf-derived sugar fraction and a method for producing same, and more particularly, to a persimmon leaf-derived sugar fraction, to a method for producing same, and to the use of same, wherein, the persimmon leaf-derived sugar fraction is characterized by having 70-90 wt% of neutral sugar, and a 10-30 wt% of uronic acid, based on the weight of the total amount of the persimmon leaf-derived sugar fraction. The sugar fraction of the present invention can be effective for producing a competitive food composition for boosting immunity and a competitive medicine for boosting immunity due to having the outstanding effects of boosting the activity of a complement system and boosting the immune function in both a normal mouse and an immunosuppressed mouse.
