MARINE MICROALGAE PAVLOVA LUTHERI FERMENTED BY LUGOPELLICULOSA AND HAVING ANTIOXIDANT ACTIVITY, A PEPTIDE ORIGINATED FROM THE PAVLOVA LUTHERI, AND A COMPOSITION FOR AN ANTIOXIDATIVE FUNCTIONAL FOOD THEREOF
MARINE MICROALGAE PAVLOVA LUTHERI FERMENTED BY LUGOPELLICULOSA AND HAVING ANTIOXIDANT ACTIVITY, A PEPTIDE ORIGINATED FROM THE PAVLOVA LUTHERI, AND A COMPOSITION FOR AN ANTIOXIDATIVE FUNCTIONAL FOOD THEREOF
PURPOSE: Marine microalgae Pavlova lutheri fermented by Candida rugopelliculosa and having antioxidative activity, a peptide originated from Pavlova lutheri, and a composition for an antioxidative functional food thereof are provided to establish optimum conditions for mass production of Pavlova lutheri and to have an excellent antioxidative effect.;CONSTITUTION: A manufacturing method of fermented Pavlova lutheri comprises the following steps: cultivating Pavlova lutheri at 26.17 deg. C, 35 ‰, 100.1 Mmolm^-2.s^-1, and pH 9.2; and fermenting the Pavlova lutheri by Candida rugopelliculosa in 33.57 deg.C, 236.38 rpm, and pH 6.17 for 23.82 hours. A peptide having an antioxidative activity is originated from the Pavlova lutheri and has an amino acid sequence of MPGPLSPL.
