The present invention relates to a production method of snack food containing the adductor muscle of pen shells, and the snack food containing the adductor muscle of the pen shells. The production method of the snack food containing the adductor muscle of the pen shells comprises the following: firstly slicing the adductor muscle of the pen shells before dipping in hot water and cooling; secondly slicing the cooled adductor muscle, mixing the sliced adductor muscle with cheese and starch before injecting into a molding frame, and heating the mixture for hardening the adductor muscle; dipping the hardened adductor muscle into starch liquid, and coating the adductor muscle with bread crumbs; and inserting the adductor muscle coated with the bread crumbs into the molding frame, and inserting dough before heating. The snack food has excellent texture including the crunchiness of the dough and the chewiness of the adductor muscle.
