PURPOSE: A rice cake premix composition and a producing method of instant rice cake using thereof are provided to simply and rapidly cook rice cake using a microwave oven at home, and to use the composition for producing glutinous or non-glutinous rice cakes. CONSTITUTION: A producing method of instant rice cake comprises the following steps: mixing 100 parts of rice cake premix composition by weight with 50-100 parts of water by weight and 1-2 parts of additional ingredient by weight selected from vegetables, fruits, mushrooms, tea, ginseng, herbs, or nuts; and cooking the mixture in a microwave oven for 100-200 seconds(based on 700W). The gelatinization degree of the rice cake, which is obtained by mixing 100 parts of rice cake premix composition by weight and 80 parts of water by weight, and cooking the mixture for 150 seconds in the microwave oven, is 35-60%.
