PURPOSE: A method for making functional Cheonggukjang using Dangjo pepper leaf extract is provided to enhance rich taste and to reduce blood glucose. CONSTITUTION: A method for making Cheonggukjang for preventing or treating diabetes comprises: a step of dipping soybeans in the water at 5-20C for 10-12 hours; a step of adding 1-1.5 times volume of water and bay salt matured for 2-5 years; a step of heating and steaming at 90-100C for 8-10 hours, at 70-90C for 1-2 hours, and 50-70C for 1-2 hours in order; a step steaming thoroughly and moving to a clean room; a step of placing on a tray in a thickness of 1-3 cm; a step of mixing 0.01-0.5 wt% of silkworm powder with the soybeans; a step of adding Dangjo pepper leaf extract, mulberry extract, or a mixture thereof and mixing with Bacillus subtilis; and a step of fermenting at 45-55C for 48-72 hours.
