The conveyor dishwasher (1) has transport device (2) to transport items to be cleaned by washing zone (10,11.2) and final rinse zone. An air extraction system (50) is connected with treatment zones via air inlet (51). The exhaust system has fan (15) to discharge exhaust air from treatment zone and condenser device, such that one portion of discharged air is directed through condenser device to withdraw by condensation of air moisture. The power of condenser device is adjustable to control temperature and absolute moisture content of exhaust air at air outlet (52) of exhaust system. An independent claim is included for method for operating conveyor dishwasher.
