Continuous process for hydrothermolysis of mono and/or oligosaccharide-containing composition comprises: (a) providing an aqueous solution containing at least one mono and/or oligosaccharide; (b) abruptly heating the solution in a heating zone; (c) hydrothermally reacting at least one part of the mono and/or oligosaccharide contained in the heated solution in a reaction zone; and (d) quenching the obtained reaction mixture.
