Preparing a concentrated and fermented milk product, preferably quark cheese, comprises: employing skimmed milk as a processed milk; subjecting the skimmed milk to ultrafiltration and separating it into a processed retentate and a fresh milk permeate; subjecting a portion of the fresh milk permeate to calcium phosphate-precipitation and calcium phosphate-separation; adding the calcium phosphate-freed fresh milk permeate to the processed retentate forming a mixed retentate; and fermenting the mixed retentate. An independent claim is also included for an apparatus for producing the concentrated fermented milk product, preferably quark cheese from skimmed milk, comprising a skimmed milk-tank, an ultrafiltration unit that adjoins in flow direction of the skimmed milk, in which the skimmed milk is separated into a processed retentate and fresh milk permeate, a heater for the fresh milk permeate and a separator for the fresh milk permeate, which is connected downstream to the heater in flow direction of the fresh milk permeate, and a mixer tank, which is fluidically connected on one side to the separator for the fresh milk permeate and on the other side (retentate side) to the ultrafiltration unit.
