PROBLEM TO BE SOLVED: To provide a xanthin lake pigment dispersion excellent in filterability and little in the degeneration and discoloration during a long time storage without corruption from the tissue of rubiaceae or the extract of its cultured cell, and a method of manufacturing the same.;SOLUTION: This high-quality xanthin lake pigment dispersion is prepared by dispersing a xanthin lake pigment in the presence of an acidic electrolyzed water, and obtained by treating, with an acidic electrolyzed water, a dispersion or its precipitate formed by adding a polyvalent metal compound in an aqueous solution of the extract from the tissue of rubiaceae or its cultured cell and laking, or by laking adding a polyvalent metal compound to the solution extracted from the tissue of rubiaceae or its cultured cell by an acidic electrolyzed water.;COPYRIGHT: (C)2011,JPO&INPIT
