PROBLEM TO BE SOLVED: To provide dried noodle excellent in springy texture when eaten.;SOLUTION: Dried noodle dough includes a mixture of nonpregelatinized noodle dough and pregelatinized noodle dough. The dried noodle is obtained by making noodle using the dried noodle dough followed by drying the noodle.
