The present invention relates to a yeast consortium isolated from the flowers of W. fruticosa, after using this consortium of yeast we found significant to improve the fermentation in many formulations such as Asava, arishta, wines, medicated wines. These yeast can confidently tolerate about 60% (w/v) sugar with production of 12-14% (v/v) self generated alcohol. This invention also declares that consortium of yeast isolates gave high batch to batch uniformity and optimized physiochemical parameters such as pH, TRS, yeast viability, specific gravity, self generated alcohol, absence of methanol, product with desired volatile acids and also fermented formulation with acceptable organoleptic properties. This invention improves the medicinal value of the formulations with stability and better clinical outcome.
