A method for convective drying of stevia leaves includes two stages of drying by a convection method. In doing so at the first stage the drying is carried out at an air temperature at the inlet into a drying chamber of 105-110 °C and at the outlet of 60-65 °C, up to the moisture content of 15-17%. At the second stage the drying is carried out at an air temperature at the inlet into the drying chamber of 72-75 °C and at the outlet of 68-74 °C, up to the maximum moisture content of 5-8%. Additionally drying of the above-ground part of stevia is carried out at the first stage at a temperature of 95-105 °C at the inlet and at the outlet of 75-85 °C and at the second stage at an air temperature at the inlet and at the outlet of 60-65 °C.
