Method for determining the ripening of fruit and vegetable products, which comprises: irradiating a fruit or vegetable product (2) with radiant light, measuring the absorbance of the product (2) at the wavelengths of 670 nm and 720nm, being measured said absorbance using a sensor (4) that measures the return radiation from the product (2) and is isolated from the light reflected by the surface of the product (2), characterized by the fact that the method further comprises determining the difference in absorbances measured at wavelengths of 670 nm and 720 nm, progressively decreasing said absorbance difference as a function of product maturation (2).
