Compositions of polyphenols, characterized in that they are monomers, oligomers or polymers of polyphenolic units that respond to formula (I): ** Formula ** these units being characterized by the simultaneous presence of a nucleus of the resorcinol type (nucleus A) and of a para-phenol type core (core B), joined together by a carbon bond C, said units being activated, as regards their nucleophilic power, by alkylation of at least one phenolic function of each unit present in monomers, oligomers or polymers, and by esterification by mixtures of fatty acids comprising mostly unsaturated fatty acids (AGI) of the phenolic functions not modified by alkylation.
