Disclosed is an edible soft-shell crustacean active product rich in calcium invertase. The preparation method thereof comprises: during the later period of shelling of a crustacean, catching and washing the crustacean, rapidly stopping metabolic activities of the crustacean immediately at low temperature or at room temperature without damaging enzymes and other active substances in the crustacean body for keeping fresh, and then drying at low temperature; and making into food by means of physical methods such as grinding, sterilizing, screening or adding a certain proportion of calcium powder and auxiliary homogeneous materials.
