Disclosed is a submarine topography six-dimensional grid surveying and mapping method, specifically, a method based on known discrete bathymetric data points. The present invention is a surveying and mapping method achieved by creating a submarine topography six-dimensional grid including an abscissa, an ordinate, the water depth, the gradient, the second derivative and the measuring time. A submarine topography three-dimensional grid is formed on the basis of the discrete water depth data and the measuring time, further the submarine gradient and the second derivative of each grid point are calculated, and the measuring time is superposed simultaneously, thereby the submarine topography six-dimensional grid is formed. The present invention comprises a plurality of steps: establishing the submarine topography six-dimensional grid structure and a topography dimension grid, establishing a time dimension grid, establishing a gradient dimension grid, and establishing a second derivative dimension grid. The present invention has the advantages of being accurate in surveying and mapping data, convenient to operate, wide in application range, little in influence of the natural weather and the like in the process of Chinese coastal surveying and mapping and ocean demarcation.
