Producing biogas from processing residues of fruits, beets or tubers or from unprocessed fruits, beets or tubers as starting substrate, which is to be fermented in a biogas reactor, comprises supplying a process auxiliary agent during the drop of minimum value of the ammonium-nitrogen concentration into the fermentation substrate. The process auxiliary agent does not form biogas. The process auxiliary agent comprises a substance, which is released into the fermentation substrate by deamination of ammonium nitrogen.
