The present invention relates to a cam assembly jig of a cam shaft and the corresponding cam assembly method, and more specifically, to an assembly jig to assemble a fuel cam or an exhaust cam with a cam shaft used for large engines of vessels allowing accurate positioning of the assembled fuel cam or exhaust cam and simple assembly and to the corresponding assembly method. For this purpose, the present invention comprises a block formed as a polygon of more than triangle at least with one side being fixed at a tip of the cam shaft and composed of a prescribed length. And the invention comprises; a temporary assembly step to temporarily assemble a fuel cam or an exhaust fan with a cam shaft; a transfer step to transfer a cam shaft with a fuel cam or an exhaust cam assembled; a jig fixing step to fix a polygonal assembly jig composed of a pentagon or an octagon onto the cam shaft; a jig level adjusting step to adjust level of the assembly jig by measuring level of a fixed assembly jig; and a cam assembly step to fix a fuel cam or an exhaust cam at a fixing position for the fuel cam or the exhaust cam on the basis of level of the assembly jig.
