A fermentation state measuring instrument of fermented food according to the present invention enables a user to easily know the fermentation state of kimchi through a color change of the fermentation state measuring instrument without removing the packing material of the kimchi by attaching the fermentation state measuring instrument to the packing material of the kimchi or a storage container and measuring a pH change under fermentation conditions which are same as the conditions of the kimchi without a contact with the kimchi. The safety reliability of food can be also improved by preventing the pollution of kimchi since the fermentation state measuring instrument is not in contact with the kimchi. Moreover, a fermentation state controlling method of a fermentation food storage according to the present invention is able to accurately fit a fermentation state which a user wants by calculating the fermentation temperature and time of kimchi in consideration of the current pH of the kimchi and performing a fermentation thereby.
