1. Encapsulated nutrient salts containing nutrient salt particles encapsulated in a water-insoluble chitosan fatty acid complex. 2. The encapsulated nutritional salts of claim 1, wherein the nutritional salt particles are selected from potassium, sodium, magnesium, calcium, manganese, zinc or selenium salts, and the salt anions are selected from chloride, sulfate, carbonate or phosphate. The encapsulated nutritional salts according to claim 1, wherein the particles of the nutritional salts are selected from the group consisting of potassium chloride and sodium chloride. The encapsulated nutritional salts of claim 1, wherein the particles of the nutritional salts are potassium chloride. The encapsulated nutritional salts of claim 1, wherein the particles of the nutritional salts have a particle diameter in the range of from about 10 nm to about 100 microns. The encapsulated nutritional salts according to claim 1, wherein the encapsulated particles of the nutritional salts remain encapsulated in acidic solutions with a pH from 2.5 to 4.3.7. The encapsulated nutritional salts according to claim 1, wherein the polymer complex breaks down or breaks up into parts in the stomach and gastrointestinal tract under the influence of an acidic environment and enzymatic systems. A method for producing encapsulated nutrient salts, comprising: a. the formation of a water-in-oil microemulsion containing oil and an aqueous salt solution b. adding chitosan and stearic acid to the water-in-oil microemulsion, where chitosan and stearic acid form a complex; c. destruction of the aqueous phase of a water-in-oil microemulsion with the formation of encapsulated salt particles. 9.
