The present invention relates to an extract of Garcinia kola and a fraction resulting from the fractionation of this extract. The compositions comprising the extract or fraction are used to inhibit the glycation of proteins, in particular the glycation of skin proteins involved in skin aging. The present invention also relates to a method for determining the activity of compounds for the inhibition of the glycation of cutaneous proteins, in particular for the inhibition of collagen glycation.
