PROBLEM TO BE SOLVED: To provide a polyunsaturated fatty acid-containing edible vegetable oil and fat having excellent oxidation stability, good flavor and high versatility and to provide foods utilizing the same.;SOLUTION: There is provided a polyunsaturated fatty acid-containing edible vegetable oil and fat containing 30 to 80 wt.% of an α-linolenic acid in a fatty acid composition. The content of a water-soluble tea polyphenol is 150 to 4000 wt.ppm with respect to the polyunsaturated fatty acid-containing edible vegetable oil and fat, the content of an emulsifier is 150 to 4000 wt.ppm, the content of the emulsifier in the oil and fat is 1.5 times or less the content of the water-soluble tea polyphenol and the value of P/S obtained by the following method is 0.8 or more. The emulsifier is a polyglycerol condensed ricinoleic acid ester. P: CDM stability time of a polyunsaturated fatty acid-containing edible vegetable oil and fat containing 150 to 4000 wt.ppm of a water-soluble tea polyphenol.
