PROBLEM TO BE SOLVED: To provide choline highly-containing yeast and choline highly-containing yeast crushed product, which each contains choline in a high concentration differently from conventional yeasts containing the choline in amounts of only about 0.2 mass% per dry yeast cells, is suitable for oral or tube-feeding nutritive composition such as liquid diets, foods or drinks, and for food raw materials, and the like, and does not deteriorate the flavor of a food to which the choline highly-containing yeast or the choline highly-containing yeast crushed product is added; to provide a method for producing choline highly-containing yeast, by which the choline highly-containing yeast can efficiently and simply be produced; and to provide various kinds of foods, such as liquid feeds and drinks, which enable living bodies to efficiently take and absorb the choline and are high in safety.;SOLUTION: In the choline highly-containing yeast, the choline content of cell bodies is at least 2.5 mass% per dry cell bodies.;COPYRIGHT: (C)2011,JPO&INPIT
