PROBLEM TO BE SOLVED: To provide an apparatus for manufacturing pureed food, in which a viscous raw material can be produced without physical and chemical damage to a raw material, and to provide a method for producing pureed food.SOLUTION: The apparatus for manufacturing pureed food is provided for preparing a raw material including solid content by crashing vegetables that have been cut into a predetermined size in advance, grinding the raw material by application of pressure, and producing a viscous raw material in which solid particles are microparticulated. The apparatus includes: a deaeration unit (deaeration pump) 2 for deaerating the gas dissolved in the raw material containing solid content until as far as an arbitrary pressure can be applied to the raw material; and a microparticulation device 3 for grinding the deaerated raw material by application of pressure to produce the viscous raw material in which the substances therein are microparticulated up to as small as a particle size of nano level.
