Method of selective oxidation of at least one oligosaccharide, a mixture thereof or a composition that (s) contains, by reacting with oxygen an aqueous solution of the oligosaccharide, of the mixture or composition in the presence of a gold catalyst formed by particles nanodispersed gold distributed on a carbon support, so that an existing aldehyde group at the carbon atom C1 carbon or carbohydrates is selectively oxidized to a carboxyl group or a aldehyde group introduced at the atom C1 carbon of a 2-ketose-selectively oxidized to carboxyl group.
