The present invention relates to a systemically- or intestinally-immunological adjuvant comprising ethanol-soluble Cheonggukjang (Korean fast-fermented bean paste) extracts as active ingredients. The immunological adjuvant of the present invention has neither toxicity nor side effects because safety-ensured food substances are used, and can reduce production costs and provide ease of use. Moreover, the oral administration of the immunological adjuvant along with immunogens can produce effective specific antibodies (IgG in the blood and IgA in the small intestine) by inducing Th1 and Th2 responses to parenterally-infectious pathogenic microbes as well as orally-infectious pathogenic microbes, or to viruses, cancer antigens, common antigens, etc.
