The present invention relates to a method for manufacturing a ginseng berry extract including high concentration of ginsenoside Re. According to the method of the present invention, a ginseng berry extract including high concentration of ginsenoside Re can be manufactured by minimizing the destruction of the ginsenoside Re, as the ginseng berry extract is sterilized through: (i) a method for thermally treating the ginseng berry extract at relatively low temperatures and rapidly cooling the same; (ii) a method for emitting ultraviolet rays to the ginseng berry extract; or (iii) a method for totally heating a solution of the ginseng berry extract.
