The present invention relates to a method for preparing a fermented liquid of Curcuma longa to optimize the production of GABA of the fermented liquid of Curcuma longa capable of improving antiamnestic activity and memory. The method for preparing a fermented liquid of Curcuma longa comprises the steps of: culturing Lactobacillus plantarum in a medium to prepare a starter; inoculating the Lactobacillus plantarum starter in a composition containing glucose, peptone, monosodium glutamate (MSG), and Curcuma longa; and fermenting the composition inoculated with the starter.
