The present invention relates to a crystalloid of a nano crystal and a micro crystal formed by bile salt and monoolein dispersion, a preparing method of the same, and use of the same for separation of protein and delivery. According to the present invention, the crystalloid of the nano crystal and the micro crystal are formed when bile salt and monoolein dispersion are mixed in a proper composition ratio. The crystalloid is used for protein separation or usefully used as a delivery system which delivers the protein by embedding a specific protein.
