Although beta-glucans, guar gum, carubin, arabinoxylans or other bulking agents have beneficial effects on health, their widespread use in aqueous foods is limited by their premature swelling when added in higher concentrations to flavor, mouthfeel and appearance of the food and can adversely affect the drinkability of a liquid food. According to the invention, the problem is solved in that a capsule is produced in which the swelling substance is in the form of a solid in the interior of a matrix whose primary constituent is a fat which protects the beta-glucan or another swelling substance from moisture and thus its swelling in aqueous medium prevented. The fact that this fat is formulated in such a way that after ingestion in the gastrointestinal tract by melting and / or. Esterases is opened, allows such swelling substances in the gastrointestinal tract to swell and unfold their physiological effects. Such a capsule can also be produced on an industrial scale.
