PROBLEM TO BE SOLVED: To provide a vinegar which is made of ginkgo fruits including external seed coats, and a production method therefor which can detoxicate ginkgolic acid of the external seed coat.SOLUTION: A production method for a vinegar involves a process in which fermented substances are obtained by fermenting ingredients which contain external seed coats and seeds of ginkgo and leaf extract of plants is added thereto. Because of this process, this method can provide vinegar which contains external seed coats and seeds of ginkgo but does not contain ginkgolic acid. In other words, this method can produce vinegar which detoxicates ginkgolic acid contained in external seed coats of ginkgo fruits.
