PROBLEM TO BE SOLVED: To provide a rice flour composition for making confectionery or powder products having excellent chewy texture, while being crisp and easy to gulp without clinging to teeth.SOLUTION: A heat-treated rice flour composition for making confectionery or powder products contains heat-treated rice flour having a content of soluble protein in 0.05 N acetic acid solution of 5 to 35 mg per 1 g of the heat-treated rice flour.
